Rabbit Vegetable Stir Fry (serves 4)

2 packages          rabbit stewing pieces

4 tbsp.                  60 mL  peanut oil or cooking oil

 

1 cup                     250 mL  broccoli florets

1 cup                     250 mL  cauliflower florets

1 cup                     250 mL  sliced carrot

1                             1 large onion sliced

½ cup                    125 mL  chopped peanuts (optional)

 

¼ cup                   60 mL soy sauce

2 tbsp.                  30 mL honey

1 tbsp.                  15 mL balsamic vinegar

 

In a frying pan heat peanut oil or oil olive and then add rabbit stewing pieces.  Sauté for 7-10 minutes until meat is no longer pink.  Add other 5 ingredients to pan and stir until just tender.  Then add the next 3 ingredients to pan and stir until combined, simmer for 3-5 minutes.  Once simmered pour over a bed of rice or noodles, serve and enjoy.
