Slow Country Rabbit Stew(serves 4 -6)

3 packages          rabbit stewing pieces

6 cups                   1.5 L chicken stock

2 cups                   500 mL chopped potato

2                              2 bay leaves

1 tbsp.                  15 mL basil

1 tsp.                     5 mL thyme

1 tsp.                     5 mL parsley

 

1 cup                     250 mL  chopped carrots

1 cup                     250 mL  chopped onions

1 cup                     250 mL  chopped celery

 

Combine first 7 ingredients in a 5 to 7 quart (5 to 7 L) slow cooker.  Cover and cook on low for 7 to 8 hours or on high for 4 to 4½ hours. 

 

Add chopped carrots, chopped onions and chopped celery to slow cooker for the last 3 hours on low and last 1½ on high.

 

Excellent served in a bread bowl.
