Piggy Back Rabbit

6                              6                              bacon slices

½ cup                    125 mL  water

3                              3                              cloves of garlic

1 tsp.                     5 mL                       rosemary

1 tsp.                     5 mL                       pepper

1 tsp.                     5 mL                       paprika

 

Place whole rabbit in roasting pan and put garlic cloves and 2 slices of bacon in cavity of fryer and add water.  Place bacon over rabbit and hold in place with toothpicks.  Sprinkle top of bacon with pepper, paprika and rosemary.  Bake in oven at 375º F(190º C) for 2½ hours with roasting pans lid on and then for ½ hour with the lid off to crisp bacon over the rabbit.  Place on large serving plate and enjoy.
