Bacon Wrapped Rabbit (serves 6)

2 tsp.                     10 mL                    lemon juice

2 tsp.                     10 mL                    olive oil

2 tsp.                     10 mL                    pepper

2 tsp.                     10 mL                    parsley

1                              1                             garlic clove minced

3 packages rabbit back cuts

1 lb bacon

Combine first 5 ingredients in a mixing bowl and then add rabbit back cuts.  Marinate rabbit back cuts in a freezer bag and refrigerate overnight or for 6-8 hours.  

Once marinated, wrap bacon around rabbit back cuts and hold in place with toothpicks.  Arrange wrapped rabbit pieces on a greased baking sheet.  Bake in oven at 375º F (190º C) for 2-2½ hours.
